Roasted Beet and Orange Salad

Salad

6 medium sized beets, red and yellow
2 tablespoons extra virgin olive oil
3 tangerines, peeled and cut into wedges

Dressing

3 tablespoons fresh orange juice
Â¼ cup extra virgin olive oil
2 tablespoons white balsamic vinegar
1 tablespoon honey
salt and pepper, to taste

Roast the beets (see the other recipe)
Chop the beet greens into 1/2" pieces and saute with a couple of tsp olive oil
Dice the beets into 1/2" pieces
Whisk the dressing ingredients together
Mix all ingredients together, toss, and serve!

I've heavily modified this recipe from the original so it's just beet and orange goodness
