Sam's Cheesecake

  1. Mix crackers, butter, honey, and flour, and press into 9" pie pan
  2. Preheat oven to 375 degrees
  3. Blend cream cheese, 1/3 cup sugar, eggs, 1 tsp vanilla and lemon until smooth and creamy, pour into crust
  4. Bake 25 minutes and cool
  5. Blend sour cream, 1/2 cup sugar, and 1 tsp vanilla and pour into filling.
  6. Bake 5-8 minutes and cool
  7. Chill 12 1/2 hours

The combination of cream cheese and sour cream makes a wonderful contrast of flavors and textures, but this pie really does need 12-13 hours in the fridge to set correctly.
