Sam's Potato Stuff

  1. Slice the potatoes into 1/4" half moons
  2. Slice the squash and mushrooms into 1/4" slices
  3. Sauté the potatoes in oil in a large frying pan until they start to brown
  4. Add the vegetables and any other extras
  5. Add salt and pepper to taste
  6. Add enough water to cover the bottom of the pan about 1/4" deep
  7. Bring to a boil, cover, and reduce to medium heat, stirring occasionally until the potatoes are cooked
  8. Uncover and stir occasionally until excess liquid has evaporated
  9. If you're using eggs, crack the eggs into the mixture and stir for a minute or two until they're cooked
  10. Sprinkle with grated cheese and serve!

This recipe is extremely versatile. You can dice up any leftover chicken or ham, add beans, tomatoes, cauliflower, almost anything that you have sitting in your fridge.
