Add enough water to cover the bottom of the pan about 1/4" deep
Bring to a boil, cover, and reduce to medium heat, stirring occasionally until the potatoes are cooked
Uncover and stir occasionally until excess liquid has evaporated
If you're using eggs, crack the eggs into the mixture and stir for a minute or two until they're cooked
Sprinkle with grated cheese and serve!
This recipe is extremely versatile. You can dice up any leftover chicken or ham, add beans, tomatoes, cauliflower, almost anything that you have sitting in your fridge.
