Turkey Cabbage Soup

- 1 Tbsp olive oil
- 1 sweet onion, chopped
- 2 celery stalks, chopped
- 2 tsp minced garlic
- 4 c finely shredded green cabbage
- 1 sweet potato, diced
- 8 c chicken or turkey broth
- 2 bay leaves
- 1 c chopped cooked turkey
- 2 tsp chopped fresh thyme
- salt and pepper
- Place a large saucepan over medium-high heat and add the olive oil
- Sauté the onion, celery, and garlic until softened and translucent, about 3 minutes
- Add the cabbage and sweet potato and sauté for 3 minutes
- Stir in the chicken broth and bay leaves and bring the soup to a boil
- Reduce the heat to low and simmer until the vegetables are tender, about 20 minutes
- Add the turkey and thyme and simmer until the turkey is heated through, about 4 minutes
- Remove the bay leaves and season the soup with salt and pepper
