Turkey Cabbage Soup

  1. Place a large saucepan over medium-high heat and add the olive oil
  2. Sauté the onion, celery, and garlic until softened and translucent, about 3 minutes
  3. Add the cabbage and sweet potato and sauté for 3 minutes
  4. Stir in the chicken broth and bay leaves and bring the soup to a boil
  5. Reduce the heat to low and simmer until the vegetables are tender, about 20 minutes
  6. Add the turkey and thyme and simmer until the turkey is heated through, about 4 minutes
  7. Remove the bay leaves and season the soup with salt and pepper
