Herb-Crusted Halibut
Credits: The Type 2 Diabetic Cookbook
- 4 5 oz halibut fillets
- olive oil, for brushing
- 1/2 c coarsely ground unsalted pistachios
- 1 Tbsp chopped fresh parsley
- 1 tsp chopped fresh thyme
- 1 tsp chopped fresh basil
- pinch of salt
- pinch of pepper
- Preheat the oven to 350 degrees F
- Pat the halibut fillets dry and place them on a parchment paper lined baking sheet
- Brush the halibut generously with olive oil
- In a small bowl, stir together the pistachios, parsley, thyme, basil, salt, and pepper
- Spoon the nut and herb mixture evenly on the fish, spreading it out so the tops of the fillets are covered
- Bake the halibut until it flakes when pressed with a fork, about 20 minutes
- Serve immediately
