Sam's Chicken Soup

  1. Chop the carrots and celery into bite-sized pieces
  2. Finely chop the garlic
  3. Sauté the onion with oil in a large pot until translucent
  4. Add the broth, carrots, celery, garlic, and herbs
  5. Add more water if desired
  6. Add salt to taste
  7. Add the chicken with the skin and bones still attached
  8. Bring to a boil and reduce to medium high heat and simmer covered for 45 minutes
  9. Remove chicken, pull off the skin and bones, chop meat into bite-sized pieces and return to pot
  10. Stir and serve!

If you want to make this into chicken noodle soup, you can add more water to the recipe, throw in noodles when you pull the chicken out, and then continue cooking until the noodles are done.
