Summer Veggie Scramble
Credits: The Type 2 Diabetic Cookbook
- 1 tsp olive oil
- 1 scallion, finely chopped
- 1/2 yellow bell pepper, seeded and chopped
- 1/2 zucchini, diced
- 8 large eggs, beaten
- 1 tomato, cored, seeded, and diced
- 2 tsp chopped fresh oregano
- salt and pepper
- Place a large skillet over medium heat and add the olive oil
- Add the scallion, bell pepper, and zucchini to the skillet and sauté for about 5 minutes
- Pour in the eggs and scramble until the eggs are cooked through
- Add the tomato and oregano to the skillet and stir to incorporate
- Serve seasoned with salt and pepper
