Summer Veggie Scramble

  1. Place a large skillet over medium heat and add the olive oil
  2. Add the scallion, bell pepper, and zucchini to the skillet and sauté for about 5 minutes
  3. Pour in the eggs and scramble until the eggs are cooked through
  4. Add the tomato and oregano to the skillet and stir to incorporate
  5. Serve seasoned with salt and pepper
