Broiled Spinach

- 8 c spinach, washed and spun dry
- 1 Tbsp olive oil
- 1/2 tsp ground cumin
- salt and pepper
- Preheat the broiler, and put an oven rack in the upper third of the oven
- Set a wire rack on a large baking sheet
- In a large bowl, massage the spinach, oil, and cumin together until all the leaves are well coated
- Spread half the spinach out on the rack, with as little overlap as possible. Season the greens lightly with salt and pepper.
- Broil the spinach until the edges are crispy, about 2 minutes
- Transfer the spinach to a large serving bowl
- Repeat with the remaining spinach
- Serve immediately
