Broiled Spinach

  1. Preheat the broiler, and put an oven rack in the upper third of the oven
  2. Set a wire rack on a large baking sheet
  3. In a large bowl, massage the spinach, oil, and cumin together until all the leaves are well coated
  4. Spread half the spinach out on the rack, with as little overlap as possible. Season the greens lightly with salt and pepper.
  5. Broil the spinach until the edges are crispy, about 2 minutes
  6. Transfer the spinach to a large serving bowl
  7. Repeat with the remaining spinach
  8. Serve immediately
