Gluten-Free Matzo Balls
Full Recipe
Matzo meal
3 c gluten-free flour (use a flour that is a 1-1 replacement for wheat flour)
1 1/3 c warm water
1/4 c olive oil
1/2 tsp salt
Matzo balls
1 1/4 c matzo meal
4 large eggs
1/4 c water
1/4 c olive oil
1 tsp baking powder
1 tsp salt

In a large bowl, whisk together the flour and salt
Preheat the oven to 425 degrees
Add the water and olive oil and mix well into a dough
Roll the dough out on a floured surface into 4 thin rectangles
Use a fork to score the dough
Bake for 15 minutes
Let the matzo cool and break into 1 - 2 inch squares
Whirl in the food processor in batches and sift the resulting matzo meal into a bowl
Matzo balls
Mix the eggs, water, and olive oil in a large bowl
Whisk together the matzo meal, baking powder, and salt in a small bowl
Mix the dry ingredients thoroughly into the egg mixture
Refrigerate uncovered for 30-45 minutes
Bring a large pot of salted water to boiling
Use wet hands to form the mixture into 1 inch balls and drop into the boiling water
Simmer, covered, for 50 minutes, occasionally dunking and turning over the balls
The matzo meal recipe makes enough meal for a double recipe of matzo balls
