Matzo meal
  1. In a large bowl, whisk together the flour and salt
  2. Preheat the oven to 425 degrees
  3. Add the water and olive oil and mix well into a dough
  4. Roll the dough out on a floured surface into 4 thin rectangles
  5. Use a fork to score the dough
  6. Bake for 15 minutes
  7. Let the matzo cool and break into 1 - 2 inch squares
  8. Whirl in the food processor in batches and sift the resulting matzo meal into a bowl
Matzo balls
  1. Mix the eggs, water, and olive oil in a large bowl
  2. Whisk together the matzo meal, baking powder, and salt in a small bowl
  3. Mix the dry ingredients thoroughly into the egg mixture
  4. Refrigerate uncovered for 30-45 minutes
  5. Bring a large pot of salted water to boiling
  6. Use wet hands to form the mixture into 1 inch balls and drop into the boiling water
  7. Simmer, covered, for 50 minutes, occasionally dunking and turning over the balls

The matzo meal recipe makes enough meal for a double recipe of matzo balls
