Cucumber Vinegar Salad
- 1 cup water
- ½ cup white wine vinegar
- ¼ cup olive oil
- ¼ cup sugar
- 2 tsp salt
- 1 Tbsp fresh or dried dill
- 3 medium cucumbers sliced into ¼-inch thick rounds
- ½ chopped red onion
- Whisk together water, white wine vinegar, olive oil, sugar, salt, and dill in a large mixing bowl.
- Add cucumbers, and red onion to the marinade. Stir to cover the vegetables with the liquid.
- Use plastic wrap to tightly cover the mixing bowl, and put it in the fridge until ready to serve. Let it marinate for at least 2 hours and up to overnight.
