1/2 c chopped other nuts (macadamias, hazelnuts, peanuts, etc.)
1/2 c grated coconut
1/2 c chopped dried fruit (optional)
1/4 c coconut oil
1/4 c honey
1 tsp vanilla extract
1 tsp cinnamon
Pre-heat the oven at 300 degrees
Heat the coconut oil and honey until melted (30 seconds in the microwave)
Add the vanilla and cinnamon and mix well
Add nuts and grated coconut and any dried fruit and mix until thoroughly coated
Spread mixture on baking sheet
Bake at 300 degrees for 20-25 minutes, turning and mixing halfway through
This recipe is very versatile and you can vary the ingredients and proportions, as long as you mix well while in the oven and bake until the mixture is light golden brown.
